Discover the Art of Italian Charcuterie in Emilia Romagna
Charcuteries is a very old Italian tradition and in every region there are several different delicious products. Emilia Romagna is a leader in production of cold cuts and some ones are really famous, like Mortadella di Bologna or Prosciutto di Parma. Have you ever asked how are made? This tour can be the answer! The visit of a facility where is made the Modena’s ham and several other kinds of cured meet.
We will start from the beginning, where the pork legs are controlled and salted. We will visit later the ageing process, to make the meat dry but soft and tasty without aromas. There will be the chance to talk about the different kind of hams and to recognize the best ones.
Finally the tour will end with a huge tasting of different cuts of cured meet, paired by local wine (lambrusco) and bread (tigelle).
