During the tour, you’ll visit a Parmigiano Reggiano producer based in the planes near Bologna. This is a truly artisan producer making about 30 wheels of the finest Parmesan per day. This experience requires a very early start in the morning to ensure that you see the entire process of making the authentic Parmigiano Reggiano DOP. You will discover why the production of this revered cheese is limited to a restricted area in the Emilia Romagna Region and why its maturation times are so much longer than most other cheeses. As part of your PARMIGIANO REGGIANO experience, you will taste the cheese at the various stages of maturation and you’ll be amazed by the high shelves of the maturation room.
