You will be picked up at the cruise terminal by a guide who will accompany you throughout the day. Your first stop will be at a Parmigiano Reggiano dairy where you can learn about the cheese-making process and taste Parmigiano.
A visit to a Parmigiano Reggiano cheese factory can be an all-encompassing sensory experience combining history, traditions, flavors and aromas. You can observe the texture of Parmigiano under a very powerful magnifying glass which will reveal it to be not just an unchanging mass of granules connected together in being cheese, but even linked in a landscape.
There are over 300 cheese dairies producing Parmigiano Reggiano in five provinces of Italy: Reggio Emilia, Modena, Parma and Bologna to the left of the Reno River and Mantua to the right of the Po River. During your visit, you will learn about how Parmigiano Reggiano is made and get to taste it too!
After that, around you will visit Modena’s ham producer where you can learn about the production of Modena’s ham and enjoy a light lunch. Modena is known for its “D.O.P. Modena Ham” which is a great delicacy whose production is subject to a detailed set of rules and regulations. The ham producer you can visit in Modena was founded 30 years ago by a founding member who had experience in the pork slaughtering and processing sector. The initial production capacity was of 1000/1500 dry-cured hams per week.
Next, you will visit a traditional balsamic vinegar producer where you can learn about the production of balsamic vinegar. Visiting a traditional balsamic vinegar producer can be an exciting experience. You can learn about the history of balsamic vinegar and how it’s made. You can also taste different types of balsamic vinegar and see how it’s aged in barrels
Finally, you will stopover at Bologna train station if you need a convenient way of transport to your next city before arriving at Ravenna cruise terminal.
